
Serves 4
720ml water
200g sugar
150g Northwest fresh sweet cherries, stoned and halved
200ml fresh lemon juice, chilled
Crushed ice
1 litre bottle of soda water
4 whole Northwest fresh sweet cherries with stems
4 long stems of fresh mint
- Combine the water and sugar in a small saucepan and add the halved cherries. Bring to the boil, reduce heat and simmer for 5 minutes. Remove from heat and cool at room temperature.
- Strain the resulting syrup into a container with a tightly fitting lid; discard the cherries. Chill the syrup until cold.
- Fill a tall glass with some crushed ice. Pour in 50ml of lemon juice, 80ml of cherry syrup and top with the soda water. Garnish with whole a whole cherry and sprig of mint.
Any left over syrup may be store in the fridge for up to one week.
